Pickled artichokes are tangy, briny, and slightly sweet, and they make a great snack or appetizer. They can also be added to salads, sandwiches, or pasta dishes.

To make pickled artichokes, you will need the following ingredients:
- 12-14 medium artichokes
- 1 cup white vinegar
- 1 cup water
- 1/2 cup sugar
- 1/4 cup kosher salt
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon crushed red pepper flakes
Instructions:
- Prepare the artichokes by removing the outer leaves and the tough choke. Cut the artichokes into quarters.
- In a large pot, combine the vinegar, water, sugar, salt, oregano, garlic powder, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Add the artichoke quarters to the pot and bring back to a boil. Reduce heat and simmer for 10 minutes, or until the artichokes are tender.
- Remove the artichokes from the pot and let cool slightly. Pack them into sterilized jars, leaving 1/2 inch of headspace.
- Pour the hot brine over the artichokes, making sure to fill the jars to the top.
- Seal the jars and let them cool completely. Store the pickled artichokes in the refrigerator for up to 2 months.
