Pickled artichokes are tangy, briny, and slightly sweet, and they make a great snack or appetizer. They can also be added to salads, sandwiches, or pasta dishes.

To make pickled artichokes, you will need the following ingredients:

  • 12-14 medium artichokes
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 cup kosher salt
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes

Instructions:

  1. Prepare the artichokes by removing the outer leaves and the tough choke. Cut the artichokes into quarters.
  2. In a large pot, combine the vinegar, water, sugar, salt, oregano, garlic powder, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Add the artichoke quarters to the pot and bring back to a boil. Reduce heat and simmer for 10 minutes, or until the artichokes are tender.
  4. Remove the artichokes from the pot and let cool slightly. Pack them into sterilized jars, leaving 1/2 inch of headspace.
  5. Pour the hot brine over the artichokes, making sure to fill the jars to the top.
  6. Seal the jars and let them cool completely. Store the pickled artichokes in the refrigerator for up to 2 months.
